SWEET POTATO CASSEROLE 
3 c. mashed, cooked sweet potatoes
1/2 c. sugar
2 eggs, lightly beaten
1 tsp. salt
Pinch of vanilla
1/2 c. packed brown sugar
1/2 stick butter
1/2 c. chopped pecans or walnuts
1 c. crushed cornflakes

Combine first four ingredients, beating until light and fluffy. Turn mixture into a 9 x 13 baking dish. Combine remaining ingredients. Spread mixture over potatoes. Bake at 350 degrees for 30 minutes.

First mixture can be frozen. Add topping just before cooking.
