SWEET POTATO CASSEROLE | |
3 lg. sweet potatoes 1 1/2 c. sugar 2 eggs 1/2 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. nutmeg 1/2 c. milk 3/4 stick butter Peel, slice and cook potatoes. Drain after they are soft cooked. Mash potatoes; add butter while they are hot and then add all other ingredients. Mix with mixer if potatoes are lumpy. Pour into casserole dish. Bake for 20 minutes at 400 degrees. TOPPING: 3/4 c. butter 1/2 c. brown sugar 1/2 c. nuts, crushed 1 c. cornflakes, crushed Melt butter; add sugar and nuts. Then add crushed cornflakes. Pour on top after the casserole has cooked 20 minutes. Cook 10 more minutes. |
