SWEET AND SOUR PORK 
2 lb. pork, chopped into 1 inch squares
1 sm. can chunk pineapple, drained (save liquid)
1 bell pepper, cut into pieces
2 eggs
Flour, for coating
Oil, for frying
4 tbsp. soy sauce

Add soy sauce and a pinch of salt to the pork squares. Let stand for 10 minutes. Beat eggs with 1 tablespoon water. Dip pork into this mixture, then roll in flour evenly. Pan brown coated pork over moderate heat. Remove pork and drain on paper towel.

SAUCE MIXTURE:

3/4 c. pineapple juice from can (or water)
2 tbsp. catsup
1/4 c. vinegar
1/2 c. brown sugar
2 tbsp. cornstarch
1/2 c. water
Salt to taste

Mix ingredients for sauce, mix cornstarch with a little water at a time. Simmer covered for about 5 minutes. When sauce mixture has thickened, add back pork and simmer 15 to 20 minutes. Next, add pineapple chunks and bell pepper. Heat another 5 minutes.
