JALAPENO WIENERS (BEEF) 
30 wieners, cut a tiny bit off each end
1 lg. flat can jalapeno peppers
2 - 3 lg. onions
Vinegar
Pinch salt

Six weeks before you want them, pack wieners in large-mouth glass jar, upright, leaving a space in center. Begin placing layers of onion and peppers until center is filled. Mix juice from peppers, vinegar and salt, and begin to fill jar. When full, take a knife and get out air bubbles. Cover and let stand in refrigerator six weeks. When ready, slice and serve on crackers with cheese.
