SOFT CORNBREAD 
2 c. water
1 c. yellow cornmeal
1 c. milk
2 eggs
1 tsp. baking powder
1 tbsp. melted shortening

Bring water to a boil and slowly add cornmeal, stirring constantly and cook until as thick as grits. Take off stove and add 1 cup of milk, 2 eggs, 1 teaspoon baking powder and melted shortening. Pour in greased casserole and bake at 400 degrees for about 45 minutes, or brown on top. Serve with chili, red beans or butter.
