TOMATO PIE 
1 unbaked pie crust
3 large tomatoes (skins on), chopped and drained
1/4 c. onions, chopped
1 c. mayonnaise
1 c. grated Parmesan cheese
3/4 sleeve Ritz crackers, crushed

Bake an unfilled pie crust at 350°F for 10 to 15 minutes. Drain tomatoes on paper towels, then add to pie crust. Add chopped onions and toss. Mix cheese and mayonnaise. Cover tomato mixture. Top with Ritz crackers.

Bake at 350°F until hot, about 20 minutes.
