MAMA'S SUMMER TOMATO PIE 
1 9 in. pie shell, unbaked
2 c. tomatoes, peeled, seeded and chopped
1/4 tsp. salt
1 tsp. fresh basil, cut in thin strips
1/4 tsp. lemon pepper
1 (4 oz.) pkg. Ukrops shredded Cheddar cheese
1/2 c. fat-free or regular mayonnaise
1 oz. Parmesan cheese, grated

Bake empty pie shell at 350°F for 5 - 6 minutes, do not brown. Combine tomatoes, salt, basil, lemon pepper, and place in pie shell. Mix Cheddar cheese and mayonnaise and spoon over tomatoes. Sprinkle with Parmesan cheese.

Bake at 350°F for 30 minutes.

Made this and loved it! I did make my own pizza dough and used that for the base and topped it off with extra cheddar cheese. Really nice recipe, will make it again!!
