GREEN TOMATO PIE 
1 1/2 c. sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
4 to 5 tbsp. flour
2 tbsp. lemon juice
4 c. green tomatoes, peeled & thinly sliced
Pastry for 2 crust pie

Blend sugar, cinnamon, nutmeg, salt, flour and lemon juice; then toss with tomatoes. Place in pastry lined pie pan and cover with top crust. Cut vent. Bake at 400 degrees for 50 to 60 minutes.

Wonderful flavor! An absolute winner. Good balance of spice and sweet. I added golden raisins and a few dried cranberries. Also, the flour thickener should be increased to 6 tablespoons. The filing was somewhat thin. Better if served the following day.
