SENATOR RUSSELL'S SWEET POTATOES 
Potatoes:

3 c. mashed sweet potatoes (boil in skin)
1 c. granulated sugar
2 eggs, beaten
1 tbsp. vanilla extract
1/2 c. butter

Remove skins from potatoes. Thoroughly mix together potatoes, sugar, eggs, vanilla extract, and butter. Pour into buttered casserole.

Topping:

1 c. packed light brown sugar
1/3 c. flour
1 c. chopped pecans
1/3 c. butter, melted

Mix topping ingredients together with a fork and sprinkle on top of casserole.

Bake at 350°F for 30 minutes or until bubbly.

Recipe is excellent. I go between this recipe and "Bourbon Sweet Potatoes" - for holidays and special occasions. Its almost like have a dessert - using a vegetable.

I have made this every Thanksgiving for years and really love it!
Children also like the special sweetness! Ironically, otherwise I prefer my sweet potatoes baked in their skin and then eating them with butter.
