BANANA BREAD 
8 tbsp. (1 stick) butter, room temperature
3/4 c. sugar
2 eggs
1 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. whole wheat flour
3 lg. ripe bananas, mashed
1 tsp. vanilla
1/2 c. chopped nuts

Preheat oven to 350 degrees. Grease 9 x 5 x 3 inch bread pan. Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Sift flour, baking soda, and salt together. Stir in whole wheat flour and add to creamed mixture, mixing well. Fold in bananas, vanilla, and nuts. Pour mixture into pan; bake 50 to 60 minutes or until cake tester comes out clean. Cool in pan 10 minutes, then on rack. Makes 1 large or 2 smaller loaves.
