CHEESE DELIGHTS 
1 lb. sharp cheddar cheese
1/2 lb. butter
3 c. self-rising flour
1 tsp. cayenne pepper
1 c. pecans, finely chopped (peanuts, walnuts, or other nuts may be used instead)

Cream the butter and cheese together. Blend in the other ingredients, mixing well. Roll the mixture into a log about 1-inch in diameter. Wrap in waxed paper and chill for at least an hour. Shortly before serving, cut the log into slices about 1/4-inch thick, lay flat on an ungreased baking sheet, and bake at 375 degrees for 15 minutes.
