INDIVIDUAL CHEESECAKES 
2 (8 oz.) pkg. cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
Vanilla wafers
1 can cherry pie filling

Beat first 5 ingredients together until light and fluffy. Line muffin pan with cupcake papers, put a wafer in each one. Fill 2/3 full with cream cheese mixture. Bake at 375 degrees for 15-20 minutes or until centers are set. When cool, top with pie filling. Should be chilled until served.
