BROWN RICE AND PORK CHOP CASSEROLE | |
6 to 7 pork chops "UNCLE BEN'S®" converted rice 2 cans consomme soup 2 American cheese slices, cut into 1/4 in. strips 2 sm. cans mushroom pieces, drained (optional) 6 tomato slices Trim fat from pork chops. Put fat into large frying pan and brown. Discard excess fat. Use the grease from the fat to brown the chops. Sprinkle rice in bottom of a 9 x 13 glass casserole dish. Cover well. Place browned pork chops on top of rice and pour consomme soup over all. Add mushrooms. Cover with foil and bake at 400 degrees for 40 minutes or until soup has cooked rice completely. Remove foil and place tomato slice on each of the chops. Criss cross 2 of the 1/4 inch strips of cheese on each tomato. Replace foil and return to oven until cheese is melted. |
