CARROT CAKE - DEELISH 
2 c. plain flour
2 c. sugar
1 1/2 c. Wesson oil
2 tsp. baking soda
4 eggs
1 c. pecans or walnuts chopped
3 c. grated carrots, very fine
1 tsp. salt
2 tsp. cinnamon
Dash nutmeg

Mix sugar, oil and eggs. Sift together flour, soda, cinnamon and salt. Slowly add to mixture of sugar, oil and eggs. Add carrots and nuts. Bake at 350 degrees for 35 minutes or until done! When toothpick is clear.

FROSTING:

3/4 stick butter
1 (8 oz.) pkg. Philadelphia cream cheese
1 box confectioners' sugar
1 tsp. vanilla
1/2 tsp. salt

Mix until light and fluffy.
