BUTTERMILK PANCAKES 
1 cup flour
1 tbsp. sugar
1 1/2 tsp. baking powder
1 cup buttermilk
1/2 tsp. baking soda
1 egg
1 tsp. salt
1/2 cup melted butter

Beat egg, add buttermilk, then add dry ingredients and mix. Add melted butter and stir.

Heat a skillet or griddle until a drop of water "dances" on the surface. Brush lightly with butter. Pour pancake batter onto hot griddle and cook for several minutes, or until bubbles begin to break along the edges; flip and bake the other side.

Served with melted butter and maple syrup.
