ASPARAGUS ROLL UPS 
6 asparagus spears, fresh or frozen, par-boiled
1 extra lg. egg
2 tbsp. seasoned bread crumbs
Oil for frying

Put enough oil in large frying pan to cover the bottom. When oil is hot scramble 1 egg in bowl and pour into frying pan. The egg will spread. Let it cook for a few seconds then layer 6 asparagus spears in center of egg. Sprinkle with bread crumbs and with a spatula fold egg crepe-like over asparagus. Flip folded side over to cook other side. When lightly browned remove from pan.

SAUCE:

Saute onion in olive oil until soft. Add Del Monte tomato sauce. Cover and simmer for 10 minutes.

In a tray put some sauce to cover bottom of pan. Place asparagus rollups in pan and cover with sauce. Put foil over tray and put in oven. Cook for 20 minutes in 375 degree oven.
