CARROT CAKE | |
3 c. sifted flour 2 tsp. baking powder 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt 1 c. raisins 1/2 c. chopped walnuts 2 c. sugar 1 1/4 c. oil 1 tsp. vanilla 4 eggs 3 c. grated carrots Sift dry ingredients together; mix raisins and walnuts and toss with 2 tablespoons flour. Beat sugar, oil and vanilla; add eggs; sir in dry ingredients. Bake in tube pan at 350 degrees for 1 hour or until done. Cool upside down. FROSTING: 3 oz. cream cheese 2 tbsp. light corn syrup 2 1/4 c. powdered sugar 1/2 tsp. vanilla Karla Buck Mildred Monson |
