CAULIFLOWER CASSEROLE 
Med. head cauliflower
1 pkg. Stove Top stuffing
1 can French fried onion rings
1/2 c. Colby cheese, grated
1 can mushroom soup
Salt and pepper to taste

Cook cauliflower until tender. Prepare stuffing according to directions. Arrange cauliflower in 9 x 13 inch pan, then cheese, stuffing, 1/2 onions, then soup (thinned with 1/2 cup water). Poke a few holes in the mixture. Bake at 350 degrees just enough for it to bubble. Sprinkle remaining onions on top. Turn off heat and leave in oven for 10-15 minutes longer. You can place chicken breasts in bottom of pan before adding other ingredients. Bake 1 hour 15 minutes.
