ZUCCHINI - SUNFLOWER SEED BREAD 
1 3/4 c. flour
2/3 c. sugar
1 tsp. cinnamon
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. hulled sunflower seeds
1/2 c. dark seedless raisins
2 c. coarsely grated zucchini
2 tsp. finely grated lemon rind
1/2 c. sunflower oil
2 lg. eggs
1 tsp. vanilla

Combine all dry ingredients in large bowl and mix well. In small bowl combine all other ingredients. Add liquid to dry ingredients; mix. Bake at 350 degrees for 55-60 minutes. Cool in pan 10 minutes. Completely cool on wire rack. Wrap and store overnight. Sprinkle with sunflower seeds before baking if desired.
