FRIED GREEN TOMATOES 
Green tomatoes
Italian bread crumbs
2 eggs, slightly beaten
Salt and pepper to taste
Olive oil

Wash, dry, and thinly slice the green tomatoes. Beat the eggs. Coat slices with the bread crumbs, salt, and pepper. Shake off excess coating. Dip in egg. Dip in the coating again. Saute tomatoes until lightly brown in olive oil. Remove from oil when they are done. Place them on a folded paper towel to absorb the excess oil.
