SPINACH BALLS | |
2 pkgs. frozen chopped spinach 3 c. herb stuffing mix 1/2 c. onion, chopped fine 6 eggs, well beaten 3/4 c. butter, melted 1/2 c. grated Parmesan cheese 1/2 tsp. garlic salt or powder 1/2 tsp. thyme Cook spinach according to package directions, drain and squeeze well. Combine spinach with remaining ingredients and mix well. Let stand 15 to 20 minutes until dough is soft. Roll into small 1 inch balls and place on lightly greased cookie sheet. Bake at 325 degrees for 15 to 20 minutes. Serve warm or cool. Yields 10 dozen. |
