EGGPLANT CASSEROLE 
3 eggplants
1 lb. ground meat
1 onion, chopped
2 toes garlic
1 rib celery
1 sm. green pepper
Salt and pepper to taste

Boil eggplant and drain. Fry ground meat with onion, garlic, celery, and pepper. Mix with eggplant. Grease casserole dish. Pour mixture in dish and sprinkle with cracker or bread crumbs. Dot with butter. Bake at 400 degrees for 30 minutes.
