EGGPLANT CASSEROLE 
3 med. eggplants, cubed
1 lb. hamburger meat
1 can mushroom soup
1 can cream of chicken soup
8 oz. shredded Cheddar cheese
1 med. onion, chopped
1 c. cooked rice

Boil cubed eggplant until tender. Brown hamburger meat and onion. Drain excess fat. Combine all ingredients except use half the cheese. Put into large casserole dish. Sprinkle remaining cheese on top. Bake in 300 degree oven for 15-20 minutes or until cheese is melted. Serves 6-8 people.
