EGGPLANT CASSEROLE 
Cooking oil
1 lg. eggplant
2 c. rice
2 lbs. meat (hamburger)
2 onions, chopped
2 tbsp. cinnamon
Dash salt
Dash pepper

Peel eggplant and slice crosswise about 1/4 inch thick. Fry in oil; drain. Cook meat and onions. Add cinnamon, salt and pepper and enough water for rice and boil. Place eggplant at bottom of pot. Add rice and cook according to directions.

NOTE: This dish is good with a yogurt-cucumber salad.
