EGGPLANT MEAT CASSEROLE 
1 lb. ground beef
Salt and pepper
2 tbsp. salad oil
1 eggplant
1/3 c. flour
1/4 c. olive oil
2 (8 oz.) cans tomato sauce
1/2 tsp. oregano
1 tbsp. Parmesan cheese
1 c. Cheddar cheese

Shape ground beef into patties. Season with salt and pepper. Brown in hot oil. Slice unpeeled eggplant into thick slices. Season with salt and pepper. Coat with flour and brown in olive oil. Place eggplant slices in a shallow baking dish. Top each with a browned meat meat patty. Cover with tomato sauce.

Sprinkle oregano and Parmesan cheese over all. Top with shredded Cheddar cheese. Bake at 300 degrees for 35 minutes.
