BEEF EGGPLANT CASSEROLE 
2 lg. eggplants
2 tbsp. green pepper, chopped
1/2 lb. ground meat
1/2 c. toasted bread crumbs
1 sm. onion, minced
3 tbsp. butter
2 c. cooked rice
Salt and pepper

Peel eggplant, cut in cubes and cook in small amount of boiling water for 15 minutes. Drain, saute next 3 ingredients in 2 tablespoons butter for 2 to 3 minutes. Add eggplant, beef and rice.
