LOUISIANA JAMBALAYA 
3-3 1/2 lbs. chicken quarters, cooked and boned
1 lb. turkey sausage, cooked
3 pork chops, cooked and boned
1 lg. onion, chopped
1/4 lg. bell pepper, chopped
1/2 bunch green onions, chopped
2 stalks celery, chopped
1 clove garlic, minced
5 c. water
3 1/4 c. rice
2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. red pepper
1 tsp. cayenne pepper

Stir fry the onion, bell pepper, green onions, celery and garlic. In large pot mix meats and stir fry mixture in water and bring to boil. Add seasonings (these are very hot, you may season to taste) and rice. Boil mixture for 10 minutes. Simmer for 30 minutes with tight cover. Serves 10.
