ORANGE-FLAVORED FRIED CHICKEN 
2 lg. oranges
1 c. milk
8 pieces of chicken
2/3 c. flour
2/3 c. yellow cornmeal
1 tsp. salt
1 tsp. pepper
4 c. sunflower oil

1. Using a grater or lemon zester, grate 3 or 4 tablespoons orange zest. Set aside for garnish. Squeeze remainder of juice into large bowl. Add milk to juice. Soak the chicken in this mixture at least 30 minutes.

2. In a paper bag, combine flour, cornmeal, salt and pepper. Coat the chicken with cornmeal mixture.

3. In a large skillet, heat 2" of oil to 350 degrees. Fry the chicken on all sides until golden brown and fully cooked, 20 minutes, then drain on paper towels.

Serve hot or cold, garnished with orange peel.
