SKILLET ZUCCHINI 
1 med. zucchini
1 sm. onion, sliced
2 tbsp. olive oil
2 tomatoes, peeled & cut up
1 tsp. salt
1/2 tsp. pepper
1 bay leaf
1/2 tsp. basil

Slice zucchini in 1 inch pieces. Brown onion slightly in oil in skillet. Add tomatoes and cook 5 minutes. Add zucchini, salt and pepper and cook gently for 20 minutes or until tender, adding a little water, if necessary. Add bay leaf and basil. Cook 2 minutes more.

Makes 4 servings.
