VEAL CUTLET 
6 veal cutlets or veal steaks
6-10 beaten eggs
Crisco
Italian bread crumbs
Salt & Pepper to taste
Parsley flakes

Partially freeze veal cutlets so they are easier to handle. May use as whole half or quarters. Dip veal cutlets into egg then into a mixture of bread crumbs and seasonings mixed together, then into egg mixture.

In a large frying pan, have Crisco heated (1/2" deep) to 400 degrees. Fry until light golden brown. Turn once and fry other side. Place on paper towels to drain. Then place in oven proof pan and bake at 350 degrees for 1/2 hour. May cover if you don't want them crispy.
