BRUNCH CASSEROLE 
8 oz. pkg. softened cream cheese
2 eggs
1 1/4 c. Monterey Jack cheese, grated
1 1/4 c. Swiss cheese, grated
1 pkg. frozen spinach or broccoli, thawed & liquid squeezed out
2 tbsp. cooking oil
1 sm. can drained, sliced mushrooms
1/4 - 1/2 tsp. salt

Grease an 8" square pan. Line the bottom of the pan with bread, which has had the crust removed. Mix the remaining ingredients and pour over bread. Bake at 350 degrees for about 1 hour and 15 minutes or until the mixture is set and lightly browned.
