ITALIAN CHICKEN 
1 frying chicken, cut in pieces
Olive oil
2 ripe tomatoes, peeled and cut up
10 green stuffed olives
3 lg. whole pimentos, cut in strips
3 tbsp. capers
1 (12 oz.) can tomato juice
Salt and pepper to taste

Flour chicken; brown in olive oil. Add other ingredients. Cover; simmer 1 to 1 1/2 hours or until tender. Add more tomato juice if needed.
