PECAN COCKTAIL DELIGHTS 
1/2 c. butter, softened
1 c. finely chopped pecans
1/4 tsp. cayenne
1 lb. (2 c.) shredded sharp cheddar cheese
1 c. all-purpose flour
1/2 tsp. salt

Cream butter and cheese. Add pecans, flour, cayenne and salt. Mix well. Form into 2 rolls 1 inch diameter. Wrap in plastic and refrigerate several hours or overnight. (Can also be frozen.) Slice rolls into thin rounds and place on lightly oiled baking sheet. Bake at 350 degrees for 15 minutes or until edges brown lightly. Remove to rack to cool.
