PECAN DELIGHT PIE 
4 egg whites, room temp.
1 c. sugar
1 3/4 tsp. baking powder
1/4 tsp. vanilla
2 c. saltine crackers, coarsely broken
3/4 c. pecans, chopped
2 c. whipped cream

Whip egg whites on medium speed until soft peaks form. Continue whipping, adding sugar and baking powder slowly until stiff peaks form. Then add vanilla; then gently fold by hand the crackers and pecans. Pour into a greased 9" pie pan. Bake at 325 degrees for 1 hour. Remove from oven and cool upside down. When cooled, top with whipped cream and sprinkle with pecans.
