CHICKEN STRATA 
2 c. diced chicken
1/2 c. mayonnaise
1/2 c. diced celery
1/2 c. diced onion
6 slices bread, cubed
1 1/2 c. milk
3 eggs
1/2 tsp. salt
1 c. grated cheese
1 can mushroom soup, undiluted

Mix chicken, mayonnaise, celery and onion together. Place half the bread cubes in bottom of 9 x 13 inch pan. Sprinkle all chicken mixture over bread cubes. Cover with remaining bread cubes. Beat milk, eggs, and salt together. Pour over casserole. Cover and refrigerate all day or overnight. Before baking pour undiluted mushroom soup over casserole. Bake uncovered at 325 degrees for 50 minutes. Remove from oven. Top with grated cheese and return to oven for additional 15 minutes. Serves 8.
