OVEN-STEAMED RICE 
1 1/2 c. white rice (regular long grain)
1 1/2 tsp. salt
2 tbsp. butter
3 1/2 c. boiling water
Dash pepper

Preheat oven to 350 degrees. In a 1 1/2 quart ungreased casserole with tight fitting lid, combine rice, salt and pepper. Dot top with butter. Pour boiling water over rice and stir until butter is melted. Cover and bake 45 minutes (do not peek; do not stir). To serve, fluff up lightly with fork.
