OVEN STEAMED RICE 
1 1/2 c. white or mixed rice
1 1/2 tsp. salt
Dash of pepper
2 tbsp. butter
3 1/2 c. boiling water
Butter

In a 1 1/2 quart ungreased casserole with tight fitting lid (or use a piece of foil tightly fitted), combine rice, salt and pepper. Dot with butter and pour boiling water in and stir until butter is melted. Cover and bake 45 minutes at 350 degrees. Do not peek or stir. Fluff up lightly with fork before serving and mix generous amounts of butter through. Can be doubled, use 3 quart casserole but do not increase cooking time.
