AMISH MEAT LOAF 
1 1/2 lbs. ground beef
1 c. grated carrot
2 eggs, slightly beaten
1 1/2 tsp. Worcestershire sauce
3 hard-cooked eggs
1 c. quick-cooking rolled oats
1/3 c. finely chopped onion
1 1/2 tsp. salt
1/4 tsp. pepper

Combine beef, oats, carrots, onion, eggs, salt, Worcestershire sauce and pepper. Form half the mixture into an 8 x 4 inch rectangle in greased shallow baking pan. Arrange hard-cooked eggs lengthwise down center of meat. Form remaining meat into rectangle slightly larger than the first and place over eggs. Press two layers of meat together to form compact loaf. Bake at 350 degrees for 50-60 minutes.
