PUFFY MEAT LOAF PIE 
1 lb. ground beef
1 c. coarsely shredded raw potatoes, well drained
1/4 c. catsup
1/4 c. finely chopped onion
1/2 tsp. salt
1/8 tsp. pepper
1 egg
1/2 c. shredded Monterey Jack cheese
1/2 c. shredded Cheddar cheese
1 (8 oz.) can refrigerator crescent dinner rolls

In large bowl, combine ground beef, potatoes, catsup, onion, salt and pepper and egg. Mix well. Press meat mixture into 9-inch pie pan. Bake in preheated 375 degree oven for 20 minutes; drain.

Separate dough into 8 triangles. Arrange triangles over partially baked meat mixture. Bake 10 minutes. Sprinkle with shredded cheese and bake an additional 5 minutes. If desired, garnish with tomatoes and parsley. Cut into wedges.
