ALMOND BUTTER COOKIES 
1 c. butter
3 tbsp. sugar
1 tsp. almond extract
2 c. flour
1/2 tsp. salt

In mixing bowl cream butter, add sugar and extract and beat thoroughly. Add flour and salt. Chill for ease in handling. Shape into 1 inch balls, place on ungreased baking sheet. With bottom of glass dipped in flour, flatten to 1/4 inch thickness. Bake in preheated 300 degree oven 10 to 12 minutes. Remove to wire rack to cool completely before topping with confectioners' frosting. Yield 4 dozen.

FROSTING:

1 c. powdered sugar
1 tbsp. butter, softened
1/2 tsp. vanilla
1 1/2 tbsp. hot water
Pink or green food coloring

In a small bowl stir together sugar, butter, vanilla and water until smooth. Add a few drops of coloring (keep color to pale pastels). Spread about 1/2 teaspoon frosting on top of each cookie. Great cookie for parties and festive occasions. Freeze well.
