PAT'S CHICKEN & PASTA 
1 lb. boneless chicken breast
4-6 peeled tomatoes
1 green pepper, sliced thin
1 sm. diced onion
1-2 tbsp. vegetable oil
1 clove crushed fresh garlic
Pinch parsley
Salt & pepper to taste

Clean and cut chicken into 1 inch wide strips. Set aside. In medium frying pan saute pepper and onion until tender. Add garlic and tomatoes crushing tomatoes with fork. Should make like a sauce. Add parsley, salt and pepper to taste. If too thick add water a tablespoon at a time. Slide in chicken strips and simmer 5-10 minutes until chicken is cooked. Serve over a bed of pasta or linguine. Sprinkle with Parmesan cheese. Note: A few sliced fresh mushrooms can be added with the tomatoes as a tasty option.
