CHEDDAR SQUASH BAKE 
6 c. thinly sliced unpared squash (zucchini)
2 slightly beaten egg yolks
1 c. dairy sour cream
2 tbsp. flour
2 stiffly beaten egg whites
1 1/2 c. shredded sharp Cheddar cheese
6 slices bacon, cooked crisp, crumbled
1 tbsp. butter
1/4 c. bread crumbs

Simmer squash until tender, drain and sprinkle with salt. Combine egg yolks, sour cream and flour; fold in egg whites. Place half squash into lightly greased 12 x 7 1/2 x 2 inch baking dish. Top with half egg mixture, half cheese and half bacon. Repeat layers of squash, etc. Melt butter and stir in bread crumbs. Sprinkle over top. Bake at 350 degrees for 20-25 minutes. Makes 8-10 servings.
