DAUPHINOIS POTATOES 
3 tbsp. butter
1 pt. milk
1 tsp. salt
Freshly ground black pepper
1 bay leaf (optional)
1 clove garlic, peeled (optional)
1 1/2 lbs. potatoes, peeled and thinly sliced

Preheat the oven to 400 F. Butter a baking dish about 9 inches in diameter with about 1/3 of the butter. Gently heat the milk in a pan, add the rest of the butter, the salt and pepper, and crumble in the bay leaf, if used. Rub the inside of the baking dish with a cut clove of garlic, if liked.

Arrange the potatoes in overlapping layers in the dish, and pour over the milk. Bake in the preheated oven for 45 minutes until the potatoes are cooked and well browned on top and the milk has become a creamy sauce.

Serves 4. Calories per serving: 275. Preparation and cooking time: 1 hour.
