"SOPAPILLAS"
2 c. flour
1 tbsp. baking powder
1/2 tsp. salt
1 tbsp. shortening
2/3 c. lukewarm water (115 degrees)
Cooking oil for deep frying
Honey, cinnamon sugar, powdered sugar

Stir together flour, baking powder and salt. Cut in shortening until mixture resembles corn meal. Gradually add water, stirring with a fork (dough will be crumbly). Turn onto floured surface; knead into a smooth ball.

Divide in half; let stand for 10 minutes. Roll each half into a 12 1/2 x 10 inch rectangle. Cut into 2 1/2 inch squares. (Do not reroll or patch dough). Fry, a few at a time, in deep hot oil until golden. Drain on paper towels. Serve with honey or roll in favorite sugar coating. Makes approximately 40. (Suggestion - cut like pizza with pizza cutter).
