SOPAPILLAS 
2 c. flour
2 tsp. baking powder
1 tsp. salt
2 tbsp. shortening
1 c. warm water

Sift dry ingredients into mixing bowl, mixing ingredients with fingers. Cut in shortening. Add water slowly to moisten ingredients. Shape into a ball; knead 3 times. Put dough in bowl, cover; let it rest 15 minutes.

Divide dough into small balls. Roll out each ball, then cut each into 4 parts. Drop into very hot oil until golden brown. May have to turn if pan isn't deep enough.

Serve as hot bread. For company or on holiday, sopapillas can be served with jelly or honey or sprinkled with powdered sugar. Also, they can be split and filled with seasoned braised beef or chicken. It looks like a taco of sorts.
