1/3 c. butter 1 egg 2 tsp. water 1/2 c. all-purpose flour 2 c. fresh vegetables (Broccoli, cauliflower, 1/4 inch carrot slices, 1/2 inch green or red pepper, 1/2 inch zucchini - optional). 1. Heat oven to 450 degrees. Brush rectangle pan with butter or Pam. 2. Beat egg and water with fork in shallow dish. Mix flour and salt in another pan. 3. Dip 1/4 of the vegetables into egg mixture. Remove 1 vegetable piece at a time, roll in flour mixture to coat. Place in pan. Pour remaining butter. 4. Bake uncoverd, turn once, until vegetables are crisp and tender and brown, 10 to 12 minutes. Sprinkle with Parmesan cheese. |
