DATE NUT BITES 
1 c. finely chopped, pitted dates
1/2 c. slivered, blanched almonds
1/2 c. sugar
1/2 tsp. vanilla extract
1 egg white
12 candied cherries, halved

In medium bowl combine dates, almonds, sugar, vanilla and egg white. Refrigerate 1 hour. Preheat oven to 325 degrees. Grease large cookie sheet. Shape date mixture into balls. Top each with a cherry half and place on cookie sheet. Bake 15-20 minutes. Cool on cookie sheet 5 minutes. Then remove balls to wire racks to cool. Makes about 24 pieces or 1 pound.
