CHEESE AND SAUSAGE QUICHE 
3/4 lb. pork sausage
1/2 c. diced onion
1/4 c. chopped green pepper
1 1/2 c. shredded Cheddar cheese
1 tbsp. flour
2 eggs
1 c. evaporated milk
1 tbsp. parsley flakes
3/4 tsp. salt
1/4 tsp. pepper
1 unbaked 9 in. pie shell

Fry the sausage and drain. Saute' onion and green pepper. Combine the cheese and flour. Stir together wit the sausage and onion. Put in the pie shell. Combine the eggs, milk and seasonings well and pour over all in pie shell. Bake at 375 degrees for 35 to 40 minutes or until well set. Let sit for 10 minutes or more before cutting.
