CHEESE AND SAUSAGE QUICHE 
2 unbaked 9-inch pie shells
2 c. shredded Cheddar cheese
1 lb. bulk sausage, cooked, drained and crumbled
1 tbsp. flour
1 tsp. salt
4 eggs, slightly beaten
1 (4 oz.) can mushrooms, drained and sliced
1 c. evaporated milk
1 tbsp. butter, melted

Preheat oven to 400 degrees and bake pie shells for 8-10 minutes. Let cool. Preheat oven to 375 degrees.

Layer half the cheese, sausage, and mushrooms in each pie shell. Combine remaining ingredients; mix until well blended. Pour half the egg mixture into each pie shell and bake for 45 minutes or until set. Let cool for 5 minutes. Cut into wedges and serve.
