PASTA WITH SAUSAGE SAUCE 
1 med. red onion
8 tbsp. butter
4 Italian sweet sausages or 12 oz. ground pork
1 c. dry white wine
Salt & pepper
1 bay leaf
1 lb. very ripe fresh tomatoes or 1 lb. canned, drained tomatoes
1 lb. pasta - spaghetti or fettuccine

Finely chop onion. Melt butter in heavy saucepan and add onion. Saute 10 minutes, stirring occasionally. Remove skins from sausage and break meat into pieces. Add to pan and saute for 10 minutes more. Add wine, salt and pepper to taste; bay leaf and let wine evaporate for 10 minutes.

Cut fresh tomatoes into pieces or pass canned through sieve or food processor. Add to meat mixture and simmer covered for 10 minutes, stirring once in awhile. Cook pasta until done, drain and put in large serving dish. Pour over sauce and toss well. Serve with Parmesan cheese.
